Here is the papaya tree, very commom in Brazil. This capture is from the southern region, nearby the little village of Morretes, around 70km from Curitiba.
"Carica papaya" is a native specie from South America. Before its mature, like showed here, its shell presents a kind of milky latex that contain substances noxious to the mucous membrane, but it is used, through cookery, to smooth beef.
In a few days after this stage the papaya will be yellow to orange, and ready to eat:
1- plain;
2- juice;
3- with one scoop of vanila ice cream;
4- You can liquefy it with vanila ice cream and add little bit of cassis (the ammount depens of your taste, but the usual is around 1 liqueur glass or half of it). Add the cassis after the papaya cream is served in the ice cream cup (this is my favorite recipe). Enjoy!
