There is no restaurant in Slavonia which doesn’t offer fish stew or fiš, the spicy, bright red delicacy which literary takes your breath away, and its joining of fish and spicy paprika especially delight the taste buds. The story on fiš goes far into the past. Allegedly, the first people who made it were the immigrants from the southern Germany, but the population of Hungarian origin claim that they take credit for the fish stew. There fore, it is not wrong to conclude that it is a sort of connection between two cuisines whose product, its majesty – the fiš is deeply rooted in the traditional Syrmia and Slavonia cuisine. Good connoisseurs of fiš say that there is no special secret in the making of fiš. You have to know only few details. The fish needs to be fresh and of quality and paprika local Slavonian. At least two types of fish are used, preferably catfish or carp, and some others if there are any, are welcome. It is only important to find the good ratio of fish, onion, tomato, grind paprika, salt, wine … and choose the correct “power” of fire and time of cooking so that all ingredients can connect and the fish shouldn’t be overcooked. As a side dish, it is usual to serve home-made wide noodles or some other form of home-made pasta. In warmer months fiš is often cooked in small kettles in the open, and the speciality in the making, for example in Ilok, is the cooking on the bank of the Danube on the fire from the wood that the river deposited. That kind of preparation creates special atmosphere and it is a great experience when you take out fiš, which is still simmering, from the kettle. Recently, the restaurants have been making a version of fiš from catfish and carp meat without bones.
