Here I show you the typical dish in one of my favorite holiday destinations, the Austrian federal state Vorarlberg: Kässpätzle with potato salad. They are also very popular in Switzerland, Tyrol and southern Germany.

Spätzle are similar to noodles. You need:
6 eggs 500 g flour 2 hints of salt a cup of cold water

Put the flour, eggs and salt into a bowl and stir them well with a solid wooden spoon. Add water bit by bit until the dough is full of bubbles. Boil at least 2 litres of water with a hint of salt. Now coat a wooden slat with some dough. Take a dough scratcher and scrape the dough in little pieces into the boiling water. Take the spaetzle out of the water with a skimmer as soon as they surface. They should look now like these.
The hot "Spätzle" are given in layers in turn with grated cheese (Emmentaler or other mountain cheese), which will melt because of the heat.
In some regions they are crisped in a pan with butter and cheese like these in my picture. They often - look here - are served with fried onions.

A very good dish after a mountain hike! To know them is to love them ;-)
