This is mochikatsuo, if you taste on the same day it cought.
Earlier the better. Before the sunset is best.
5lb one costs 3,000-5,000 in some fishing ports along Pacific coast of Japan.
Fished with pole and line, treated specially.
Enshu and Kishu are famous districts tasting mochikatsuo.
After the midnight, it turns identical to ordinary purse netted 600/5lb katsuo just like Cinderella after loosing the glass shoes.
