Photographer's Note

Ika no shiokara(wiki) is most common today. Katsuo no shiokara is descibed in 1695 food book "Honcho Shokkan" though, a sudy by prof. NITO Atsushi on "Katsuo as a tax in 7th century Izu" hinting salt fermented katsuo.

Enjoy with a shot of straight whiskey if you like it, or a cup of sake, It is so delicious on a cup of gohan.
