Photographer's Note

The oven is a traditional masonry design. A wood fire is built in the oven and kept burning for several hours until the mass of the oven becomes quite hot. Then the coals and ashes are removed and bread is baked in the residual heat.

Ideally I would have been able to put a little light on the baker, but he isn't the subject of the picture.

Shot at 400 ISO and cleaned up using Neat Image.
