Another snap at Gulja market place, showing the classical mutton kebabs or 'kawap' being cooked over a charcoal grill. It's by far the most common Uyghur Central Asian street food here, to the point that you can find a kebab’s stand in pretty much every corner of Xinjiang. They looked good, they smelt good and they tasted just as good, but the flavour of sheep pervaded the whole street.

I was rather taken by the concentration of these two chefs as the smoke increased and clouded the scene, fired off a few frames but loved the fact that they just ignored me! it is nice to see a more down to earth approach to every day life over here....
