Photographer's Note

An antique looking Uyghur bakery that still survives in the heart of Kashgar old quarter, section of Central Asian oasis left of the old medieval town considered by Uyghur as their spiritual home and cultural capital in East Tukestan. It's the sight of flat bread being baked traditionally in a wood fire fueled tandoor style clay oven, the same way bread is baked in other Central Asian countries. For them, breads are part of everyday meal and more than just food; it's a sign of well-being and a prominent part of their cuisine, culture and a way of life.

Whenever I passed one of these stands I couldn't help but be taken in by the intoxicating smell of fresh bread. You really get a feeling like you're still in the past century, it's like living time-travel, a place where time stands still.

Not sure whether this old bakery still survives after ten years........
