A Trapiche is artisanal still for distillation Grogue, sugar cane brandy in Cape Verde.
The Trapiche consists of a device designed to grind the sugar cane, currently by mechanical means, but once it was moved by oxen. In the period of slavery, the animal work has even occasionally be performed by slaves.
The cane is well ground, and the juice of the cane, the "tail" (as it is called in Cape Verde) is then distilled in still then give the Grog
