I too was very surprised (and almost intimidated) by the immaculated presentation of this evaporator: my mother's family has a "cabane à sucre" in St-Ambroise-de-Kildare, and I've been used to see evaporators that look a little older (see one in action here: http://www.banlieusardises.com/delices/archives/000422.html ) I found quite impressive that in that piece, everything was steel, white and blue, even the outdoor coat that you see far behind...
