Photographer’s Note
Oscypek- it's a name of a traditional Polish (and Slovak as well), smoked cheese, made of sheep's milk.
Nowadays, it's usually made of cows' milk, as the sheep keeping is not a big business anymore. It tastes really good, more salty than normal cheese, more dry...hard to explain:)
This man was sitting in an old hut (filled with smoke coming from the bonfire) making the cheese in the traditional way- with his own hands.
Baligówka is an interesting place. There are bogs with heather (which is definitely not typical for Poland) where you can wander, and mountains looming on the horizon- Tatra Mountains and the Beskidy.
