Photographer’s Note
To walk in the Asian, and Chinese markets in particular, is always an interesting experiment and sometimes diverting. This market of Macau, where the fishmongers are very numerous, makes it possible to measure the direction of fresh product. The fish are almost always presented alive indeed and sometimes disencumbered of a part of their flesh letting appear their beating heart!
