Food being one of the joys of travelling...

Anyone who either lives in the Mekong Delta or has travelled there, will surely recognize one of the region's local delicatessen!

The meat of the fish is to be plucked off with your chopsticks, then rolled in a rice paper wrapper, together with a variety of condiments and spices, and a healthy dose of 'bum' (rice noodles). Star fruit and pineapple slices come particularly recommended too. And don't forget those fresh mint leaves!

Finished? Then dip your stuffed roll in a sause of your choice and go mmmm....

When I got to know the Mekong Delta almost ten years ago, ca tai tung ('elephant ear fish') was THE fish for this, with its large fins and scales making your roll extra crunchy. Now they do it with several other types of fish too.
