Photographer’s Note

Four seas (Black Sea, Marmara Sea, Aegean Sea and the Mediterranean) surround Anatolia and the residents of the coastal cities are experts in preparing fish. Winter is the premium season for fish, as many species migrate from the Black Sea to warmer waters and reach their mature sizes.
Every month offers a new delicacy of fish at its prime, served along with certain complimenting vegetables. For example, the best Bonito is eaten with arugula and red onions, Blue Fish with lettuce, Turbot with Kos lettuce. Large Bonito may be poached with celery root. Mackerel is stuffed with chopped onions before grilling, while summer fish, which are younger and drier, are poached with tomatoes and green peppers, or fried. Bay leaves always accompany both poached and grilled fish.
Grilling fish over charcoal, where the fish juices hit the embers and envelope the fish with the smoke, is perhaps the most delicious way of eating it, as it brings out the delicate flavours. This is also why the grilled fish and bread sold by vendors on their boats are so tasty.

"Hamsi" (the fish in this picture) is the prince of all fish known to Turks: the Black Sea people know forty one ways of making hamsi including hamsi borek, hamsi pilaf and hamsi dessert! Another common seafood are deep fried mussels, poached, or as a mussel dolma with rice and mussel pilaf.
Along the Aegean, octopus and calamary are added to the meze spread. The best places for fish are in the fish restaurants and taverns. After being seated, it is customary to visit the kitchen or the display to pick your fish and discuss the way you want it to be prepared. The price of the fish is also disclosed at this time. Then you swing by the meze display and order the ones you want. So the evening begins, sipping raki in between sampling of meze, watching the sunset and slowly setting the pace for conversation that will continue hours into the right. Drinking is never a hurried, loud, boisterous or a lonely affair. It is a communal, gently festive and cultured way of entertainment...

Kadıköy çarşısı en sevdiğim mekânlardan biridir İstanbul'da. Hamsiler de gerçekten çok tazeymiş. Denizci ulus olmakla övünen Portekizliler bu balığı tanımıyorlar ne yazık ki. Büyük bir kayıp bence (Buralarda sardalye ızgara revaçta).

Kırmızı tepsi üzerine gümüşî balıklar hoş bir görüntü oluşturmuş.

İstanbul'un değerini bilin :)

Seems the "dead fish club" is very busy and promoter is still trying to open space for new arrivals. Is there any private reservation or other organisation for "already dead fishes" ?

deniz bugün aradı ama iraklisin haberini vermeyi yine unuttum, corcun maceralarını anlatmaktan sıra gelmiyor ki :S
gözü kocaman açık, üst üste yığın olmuş, hakkın rahmetine kavuşmuş bu hamsilerle milletin gözünü korkutcan (ayyy bak korkut-can oldu :p), yüzüğü geri isticek kızdan, sonra vebali sana olcak...

Merhabalar. Bu balıklar capcanlı duruyorlar. Kırmızı tabla iyi ki görünüyor, ve o metal tabak iyi ki var, balıkların yüzeyi ile çok hoş bir uyum yakalamış. Çok da güzel bir açıklama yazmışsınız (yılbaşı gecesi devam etseydi özlemi mi?..:)). Ayrıca gönderme yaptığınız arkadaşla atışmanız da çok hoş. :) Elinize, gönlünüze sağlık. The plate is in an inviting position but it seems that no one wants to step forward. I love the way you can find an image symbolic of every occasion. The red of the table couldn't be better. (I was thinking of its eye-catching properties but maybe it symbolises something else! ;D)
I love fish and by the time I finished your note I was drooling. Probably had too much turkey recently!

Only one correction: "gavros" in greek slang is synonymous to the fans of Olympiakos football club, and I am a fan of AEK FC (AEK means "Αθλητική Ένωση Κωνσταντινουπολεως"= "Athletic Union of Constantinople"), did you know? and our synonymous in the greek slang is "hanoumakia", means "little hanums"!

Deniz have a shot with some dead fish(it`s the same place?)...the only thing...his didn`t joined the club...;-P...I`m curios...why dead fish club?...:-D...hoping not to join again :-)))...eating from the same plate?...it`s better from different plates...:-)))...just teasing you ;-P.
Which fish is the president of the club?

Fine shot mister...why not in b&w?...you know,they say...eating fish in the last evening of the year will bring much more money in the year to come...so...a lot of "fish" for 2009.

BTW...my best to all who joined the club :-)...and missing Sakis photos ;-).

i think this one needs at least 100 points :P
I must admit that I have mixed feelings. On one side is such a graphical pleasure to look at...bluish silver on red but on the other side little repulsive because of so many dead fish. And bad smell. Yes, I can smell it. :)
But I would be a complete hypocrite not appreciating the artistic effort made just because I do not like seeing dead fish but loving to eat them... :S :)
