Photographer’s Note

I took this one in Cayo Sal, a key of the National Park Morrocoy which has a saline in its center. As this key has food service, they have to transport the food from the coast. There were still some green platanos (cook bananas) on the dock. Green plantains are used as an ingredient for sancochos (a soup with a lot of roots and some vegetables, which can be made with fish - especially at the beach - or meat or poultry); they are also used for "tostones" a very popular treat at the beach. Tostones are made by slicing the green raw cook bananas, frying them for a while, taking them out and squashing them by hand. Sometimes, they are fried again and squashed again. Then they are salted and ready to be eaten. We had fish with tostones and cole slaw for lunch. You can also order tostones appart and sometimes they are almost prepared like hot dogs without the bread: covered with ketchup, mayonnaise, mustard, shredded cabbage and carrots and grated white cheese.
