Found nowhere else in the world these jade shelled beauties have been cultivated on longlines nestled in the idyllic fiords and remote coastlines of New Zealand.
New Zealand Green-lipped Mussels are a native New Zealand shellfish.
They are easily recognized by their vibrant green and gold shell coloring.
The plump tender meat is creamy white when the mussel is male and apricot to orange when the mussel is female.
Flavor is not differentiated by color and the flavor of both is superb.
Although it only has a population of around 500, Havelock bills itself as "the Green-lipped Mussel Capital of the World".
Havelock was once a thriving gold-mining town, however the gold is green these days and comes in the form of green-lipped mussels - try them for lunch at the Mussel Boys Restaurant...with a glass of superb Sauvignon wine from the Marlborough Country....YUMMY, YUMMY !!

Great stuff Kris, do you have the recipie for this as well? The sharpness and POV are great. It is a unique photo to me and I also learnt something from your note about the colour and gender of the green-lip mussle.
