Photographer’s Note

This is a view of Gus's World Famous Fried Chicken - behind the scenes. I have to admit that I was enamored by this place - it was so incredibly Memphis. You know a great eating establishment when it is full of local folk having their lunch on a weekday - even if the wait is 20 or 30 minutes to get a table. Things do go slower in the southern United States, I will admit, so it is probably ok to take longer than an hour or so to get lunch on a workday.

I took several photographs at Gus's - most notably the Hat Lady. I also have a couple that I posted on TL, as well. The place was dark, therefore I had to use a high ISO and that caused a little bit of noise and muddiness, but this still portrays the kitchen and the cook (don't know if that is Gus or not) pretty well. I got him in action, battering up some good sized chicken wings.

They serve quite a lot of chicken at this place, and I have to tell you it is just scrumptious. I don't use that word lightly, either. We went to Gus's twice - we rarely do that on any trip to anywhere - the food has to be great or it is the only place in town worth eating. This is guaranteed the former. I even bought a t-shirt!

Gus has a special batter that he uses for his chicken. I think he uses "Texas Pete" hot sauce in there, just enough to give it a tang.

Did I mention the Fried Dill Pickles?

If you get to Memphis and find this place, you have to try the fried dill pickles, too. It's an appetizer, not a full course, so you can eat them and a couple pieces of chicken without a problem. Don't forget to get a 32 ounce bottle of beer to wash it down! They probably have a "40" there if you ask for it. Apparently those are better with breakfast, though...
