"Huevos Motuleños", Eggs Motuleños.

Succulent breakfast: fried eggs on toast covered with refried bean; it is decorated with tomato sauce, chopped ham and crumbled white cheese.

This was one of my breakfasts during my stay in the city of Mexico, Federal District. (This plate is native of the Gastronomy of the state of Yucatan. http://www.mayayucatan.com.mx/nuevo.htm)

The culinary delights of the kitchen yucateca are made of an exquisite sample of Mexican and European flavors, Having ports and commercial treatments with Europe, New Orleans and Cuba, the yucatecos was influenced by many aspects of these countries and cities.

'Eggs Motuleños'

Ingredients:
6 eggs
1/4 kg. of shortening (Manteca)
12 tortillas
1/2 kg. of bean in pasta
100 gr. of ham cooked dive (to itch in form of squares)
100 gr. of grated white cheese of soup
1 lata of peas
10 tomatoes
Salt to the pleasure
1 white onion

Preparation:
First, the tortillas are gilded in very hot shortening. They slip so that they are removed the excess of fat.

The tomatoes are boiled and to liquefy hot, with the onion. Then, the sauce is fried.

It forms of Serving it:
In an extended plate, a bean bed is made in pasta, above a fried tortilla, on the tortilla one or two starry eggs, have more than enough these tomato sauce, they cover with another fried tortilla taken a bath with enough sauce, ham dive, peas and grated cheese.
