This man right here is a Jimador. Jimadores are the people that work on the Agave plantations. Agave its a plant that is used to make tekila.
This jimador called Ismael, has been working on this for 37 years. He works for the company José Cuervo. One of the best tekila companies in México.
Tekila is made in Mexico and in the state of Jalisco. No one can make tekila outside the land of Jalisco. For the drink to be called Tekila it must be made just in the state of Jalisco. The Agave takes about 8 to 10 years to be enough mature to make tekila. Every single day José Cuervo makes tekila.
Here Ismael showed to us how to cut the agave. There are different ways to cut it. After you will get like a pineapple thing.

Hola Alonso. Nunca he visto una plantacion de este tipo pero la planta se ve muy interesante. Ademas de la explicacion que das sobre el tequila. Realmente pienso que tal bebida es demasiado mexicana para que otra gente la pueda imitar. Bonita foto con mucho grafismo. Saludos :-)
