In the heart of La Paz, there is a family operation, "The Bagel Shop." Bagel-making is difficult and time-consuming. Dough must be mixed and formed into balls, allowed to rise, formed into rings, allowed again to rise, then boiled and baked. If each step is not perfect, the bagel will not be successful. I am happy to report that the bagels at The Bagel Shop are VERY successful!
