The locality of Consuegra (Toledo), with a very excellent old town placed on remains of the Roman city of Consaburum, the river Amarguillo divides her in two connected by metallic bridges that today substitute those of Roman origin, knocked down by the flood of the XIXth century. The Arab domination, the later capture by Alfonso VI and the fact that in 1.183 Alfonso VIII was transferring her, together with his castle, to the Hospitable Order of Saint John of Jerusalem, left in Mother of the son-in-law notable architectural traces that they can appreciate going for a walk along the locality or visiting his museum. His interesting monuments, the castle, the military and, defenses especially, the crestería named Hill Calderico, of his wind mills, does of this population an attractive place for tourists and visitors.

Although in his day they were thirteen mills those that were crowning the hill, at present there survive eleven, of which "Sancho" still possesses the whole machinery of the XVIth century in ideal state for his functioning. Once to the year, last weekend of October, coinciding with the Holiday of the Rose of the Saffron, " Sancho " leaves some open seas of his eight small windows (the mills of Consuegra do not take twelve as the others) and it moves his sails realizing the Grinding of the Peace, a symbolic act in which diverse excellent personalities take part in the world of the culture and the communication.

Once a year in so called Crestería Manchega, on top of the Hill Calderico that Consuegra dominates, they open to themselves the windows and there are faced the sails of the mill so-called "Sancho" and the machinery moves again the enormous stone - with proper name Catalina - who crushes the grain, turning it into flour. The excuse is the Holiday of the Rose of the Saffron that takes place in this city from 1.962, last weekend of October. In every occasion the wheat is brought of a different place, in 1997 it came from the different places that Cervantes made cover to Don Quijote. In this occasion (1998) it comes from the French Brittany, there the Friends' Association of the Mills has taken charge sending it. On Saturday, once turned the wheat in flour, distributes in sachets the visitors, approximately approximately 3.000 persons a year.

The mill so called "Gentleman of the Green Overcoat" preserves editions of the Quixotic in diverse languages, as well as an edition of Braille of 22 volumes. The 'Bolero' receives to the office of tourism (925-475731); and the 'Espartero' there have been restored by the School Workshop of Consuegra, the last one with exhibition of works realized by the pupils. The 'Sparks' it shows an exhibition of the work of Gregorio Prieto.
Soon five of the mills will be destined for rural houses, a project carried out by the Town hall, Social European Fund and Meeting of Communities of Castilla-La Mancha, which will realize the School Workshop and across which the mills will be able to be rented by interested those in living during some time in these constructions that formerly served for the grinding and today they constitute a beautiful and decorative element of the scenery, from which wide panoramic one is contemplated of The Mancha.
