Faithful to the traditions Castres (Tarn) that keeps the upscale gastronomy with its "Marché au Gras" which takes place every year from November until mid-April. Lovers of local production of terroir will find ducks or geese fat, ready to be cut but also raw or cooked foie gras and all sorts of preparations of duck or goose.
