Photographer’s Note

The harvest takes place once a year in September, before the important autumn rains. During one month, all energies are mobilized to raise a first-quality salt.
Harvesters reap the "salt cake" by lifting it gently from the ground.
This method allows a collect of salt a particularly pure : the rate of sodium chloride reached 99.5%, a percentage higher than that advocated by the international food standards in force.
