This kind of flat bread in Uzbek is called "non" - a directly related word to the Indian/Pakistani "nan". What's more important is that it's delicious!!! And I loved the photo - very evocative of Uzbekistan.

Great composition! I especially like the expression on the man's face, made more intense by the sideways glance. Agree about the date stamp, but it looks difficult to crop or even clone out.
