Photographer’s Note

I lived on the Holiday Inn, Clarkfield property in the Philippines during my 2.5 years there and since my little villa didn't have a kitchen, I ate most of my meals in the hotel or local restaurants around Clark. On the top floor of the hotel is a Mongolian Barbecue. It is a rooftop restaurant and you have to do some battle with the bugs, but it is a nice change from the usual menu in the lobby restaurant.

I had become friends with the hotel chef and he needed to make a presentation to the facility in Manila, so he asked if I would shoot some photos of the Mongolian Barbecue. In all of the other shots, the staff looked up and smiled, but this staffer was intent on cooking a patron's selection and he did not pause for the usual bright smile.

I liked going up there when the typhoon season was in full force. There were no windows, but it was a covered facility, so you could eat while the rain was punding down on the roof. It was nice to be able to eat outside. Since the hotel was far from the road, it was quiet and you didn't have the pollution of the trikes and jeepney's to contend with when dining at the Mongolian Barbecue.
