One of basic ingredients of one of th most popular Louang Prapang regional cuisine is the water buffalo tailes. Skin and meat of buffalo are salted and dryed up in a sunny area. Here we are at the Oudomxai market. The smell was intolerable, millions of flies was flying around the meat in decomposition. (Also note the parablic recevers in the backgroun near a poor woody hovel).
You can try this tipical recipe from Louang Prabang, called Or Lam. Slice in small bits a buffalo dried tail (meat and skin together), add some lemongrass and eggplant, and a lot of chilies, along with Pa daek, a fermented fish sauce. If you want to make a royal recipe, add crisp-fried pork skin and basil.
