Photographer’s Note

While the New Year is arriving, one should think about some delicacies for the last dinner of the year. The more exotic, the best way to start the reveillon. As mentioned in my previous post, bread is essential in every meal, but each culture has its own fragances and distinctive tastes and Lao cuisine is known for its fiery tastes with a touch of sour. Eaten with the hands along with the staple sticky rice, much of Lao cuisine is roasted over an open fire and served with fresh herbs and vegetables. Pork, chicken, duck and water buffalo all end up in the kitchen. And nothing is wasted as you can see here.
To learn about diferent cultures we should try the food of the countries we visit. This time, I invite you to try this special roasted pig tail ;-)

Taken in the festivities that happened after the boat race, close to the margins of Mekong river opposite to Luang Prabang side. This is part of the Festival of Lights (full moon in October).
