Photographer’s Note
July 16: The evening, our representative in Japan, have leaded us into a smal restaurant inside a cellar. It was a pleasure for the taste buds. Fishes under all forms, all beter than others.I like it very much. I show you the rest of the flighing fish..., in fact the decoration of the plate done with the head and the rest of he body. In background you have the soja sauce.
I have put inside a WS, 4 small picture of the restaurant, the entry, the tables, the saké... and the output. You can see that the door is quite small. Our representative, which is not big, has to bend down.

And I thought that the Dutch habit of eating raw herring was already a bit strange... This piece of food is really a piece of art. The Japanese are really good in presentation of their food. It sometimes hurts to actually eat it, because it looks so nice. Thanks for sharing this dish with us. Your workshop is a good idea to give us a clue about the circumstances when you took this picture.

Surely a special restaurant after Danish messures - I like the fine view your workshop gives us and the artistic decoration from you fine photo - May be its time to try sushi one of these days - thanks Jacques.

An absolutely smashing plate decoration. But not to anyone's liking I suppose ;-) Your pic is well composed, sharp with a good DoF. The flash blowed out some highlites but this doesn't disturb me. I like your WS compilation also - it provides vital context. Very fine work, Bravo Jacques.

Excellent, Jacques ! En plus, il semble que le pique qui tient ce petit poisson replié est un de ces fameux cure-dents japonais, artistiquement tournés ! L'exposition est parfaite. Le petit complément du workshop aussi ! Merci, Jacques !

A very inteestind and a very special shot, Jacques. I didn't know that they eat flying fish. This fish is captured in a very special situation, it looks half alive, and half eaten. It seems that you had a great time there..

A beautiful capture of a beautiful decoration, Jacques. Your DOF is splendid and the inclusion of further photos in the WS is fun. I have not yet tried sushi, although there's a long and vital tradition of eating raw fish in Sweden. And looking at your image I feel indecisive about it - but your photo is good. Well done!
