In West Bengal date palms come with a wonderful gift during winter! They produce a very sweet liquid which is collected by the villagers through these pots for their own consumption. As far as I know,first of all the part just under the leaves is scraped . Then just after the sunset an earthern pot is hung below the scraped part.Throughout the night the juice collects in the pot. The next morning before sunrise the pot is taken out,and the liquid is consumed as the sun rays make it toxic.
This photograph shows that the early bird really does get it all!

You have created a poetry of a village life in West Bengal. The famous movie "Saudagar" by Amitabha Bachchan and Nutan can be remembered in this context. There the life and culture of muslim community revolves around this Date-palm sap and making jaggery from it for a livelyhood.
Just an add-on:
Sunray does not make it toxic. Actually the warmth along with the sunrise quickens the fermentation process of the sweet sap in the earthen pot.
The alcohol that is created by this process as you know is not toxic but.................
