Photographer's Note

Pulled noodles, known in Xinjiang province and Central Asia as laghman noodles, a very common dish and staple food considered as national dish of the Uyghur people - the Muslim minority of China that has its own language, tradition and culture. Laghmans are made very quickly and eaten by millions on a daily basis; the chef takes a floured piece of dough, kneads, pulled to ensure the right consistency, twists and cuts into little spaghetti, then the pasta is plunged into boiling water for a few seconds and served immediately with savory of soups and 'suoman' - vegetable and beef or mutton meat mixture

It’s almost as fun to watch this cool guy showing his skill as it is to eat the delicious food, but his impressive dexterity takes years to perfect.
