| It is very interesting for the foreighners to see nowdays using old technique to produce wheat flour. Visiting Eastern Turkestan, now known as Xinjiang, Kashgar city you can still feel yourself taken back to the century of simplisity and harmony of nature with people. Tughmen or Tugmen (uyghur) = so called the stuff on the photo. Mill (eng). |

Hello, Adiljan, welcome to TE!
This is a nice picture for teaching us something about Uighur food techniques. It is also a good composition, balancing the circle of the of the mill with the circle of the wheel; the color combination is also good. It was OK to cut out part of the wheel in the background, but I think you should have included all of the metal piece to the right of the mill if possible.
