Photographer’s Note

This dish is called "Beggars Chicken". We ate at the Lou Wai Lou Restaurant on West Lake. The traditional method is to first marinate the bird, wrapping it in lotus leaves and then seal it in mud before baking. This is a specialty of this restaurant...and it was great!
