This dish is called "Beggars Chicken". We ate at the Lou Wai Lou Restaurant on West Lake. The traditional method is to first marinate the bird, wrapping it in lotus leaves and then seal it in mud before baking. This is a specialty of this restaurant...and it was great!

Hello George,
I totally agree with you: to know and taste the typical food is one of best methods to know the sites, peoples and countries. From your photo is possible to learn so much about the typical culture.
