The most obvious way to prevent deterioration, and loss of quality is to keep alive the fish caught to the time of consumption. The handling of live fish trade and consumption has been practiced with carp in China , probably by more than three thousand years. Today, keeping fish alive until consumption is a common practice of handling both developed and developing countries and both community and industrial scales .
In today's China is common to see street vendors of live fish , here are carp , freshwater fish .
Species belonging to the family Cyprinidae . It is a fish fresh water originating from China, where they have been cultivated over 3000 years desdehace being the continent that dominates world production of this species.

It is now found in rivers and lakes of the warmer parts of Europe and Asia.

He likes the calm waters with little current , rich in vegetation and muddy bottom . It is very demanding in terms of water quality , supporting the well water with very little oxygen, high temperatures and high levels of contamination.
