Photographer's Note

The most common refreshment of Morocco is mint tea prepared in bulbous, silver-coloured tea-pots and served in glasses. It is an infusion of mint leaves and either green or negre (black) tea (a solicitous host will offer both). The mint is placed either in the glass or in the tea-pot. When poured, the pot is usually held high above the glass in order to "aerate" the liquid as it falls. Tea is served throughout the day and after any meal. Sometimes instead of mint, it is laced with peanuts or orange blossom.
