Let me second what Lueve said, mainly the recommendations for:
- Donostia (San Sebastian)
- Santiago de Compostela
- Cantabric coast
- Trujillo

I have visited all of them and they are jewels. Santiago may well be my second favorite city in the country (after Barcelona).
